Raclette cheese is a cows' milk cheese that has a light-brown rind and a semi-firm texture. It is used in a potato dish; the name is derived from the French verb racler (to scrape).
Although the cheese has a pleasant enough flavour, it is not special until it is heated in front of a fire or under a hot grill. The full nutty, sweet and slightly fruity aroma intensifies and the elasticity of the melting cheese makes it truly magnificent.
Although it's clearly not a British cheese, we've been asked so many times to list it we couldn't refuse!
This is traditional French cheese of a very high quality and melts fantastically.
